Vegetable Poha is a nutritious and quick Indian breakfast made from flattened rice and sautéed veggies. It’s light, flavorful, and ready in under 15 minutes.
Ingredients
- 1½ cups poha (flattened rice)
- 1 onion (chopped)
- 1 small potato (cubed)
- 1 green chili
- Curry leaves
- ¼ tsp turmeric
- Salt to taste
- 1 tbsp lemon juice
- Coriander for garnish
Instructions
- Rinse poha under water, drain, and let it rest.
- Heat oil, add mustard seeds, curry leaves, and green chili.
- Add onions and potatoes, cook till soft.
- Add turmeric and salt. Mix in poha.
- Cook for 2–3 minutes on low heat.
- Garnish with lemon juice and coriander.
Tips
- Don’t soak poha for too long—it turns mushy.
- Add peanuts for crunch.
