Vegetable Poha

Vegetable Poha is a nutritious and quick Indian breakfast made from flattened rice and sautéed veggies. It’s light, flavorful, and ready in under 15 minutes.

Ingredients

  • 1½ cups poha (flattened rice)
  • 1 onion (chopped)
  • 1 small potato (cubed)
  • 1 green chili
  • Curry leaves
  • ¼ tsp turmeric
  • Salt to taste
  • 1 tbsp lemon juice
  • Coriander for garnish

Instructions

  1. Rinse poha under water, drain, and let it rest.
  2. Heat oil, add mustard seeds, curry leaves, and green chili.
  3. Add onions and potatoes, cook till soft.
  4. Add turmeric and salt. Mix in poha.
  5. Cook for 2–3 minutes on low heat.
  6. Garnish with lemon juice and coriander.

Tips

  • Don’t soak poha for too long—it turns mushy.
  • Add peanuts for crunch.
