Vegetable Pulao is a quick, colorful, and wholesome rice dish packed with the goodness of mixed vegetables and aromatic spices. Perfect for a light yet filling lunch, this pulao can be paired with raita or a simple salad for a satisfying meal.
Ingredients
- 1 cup basmati rice
- 1/2 cup mixed vegetables (carrot, peas, beans)
- 1 onion (sliced)
- 1 tomato (chopped)
- 1 bay leaf
- 2 cloves
- 2 green cardamoms
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil or ghee
- 2 cups water
Instructions
- Wash and soak rice for 20 minutes. Drain.
- Heat oil/ghee in a pan. Add cumin seeds, bay leaf, cloves, and cardamoms.
- Add sliced onion and sauté until golden.
- Add ginger-garlic paste and sauté.
- Add chopped tomatoes and cook till soft.
- Add mixed vegetables, salt, garam masala, and cook for 2-3 minutes.
- Add soaked rice and mix gently.
- Pour water, cover, and cook on low flame until rice is done.
- Fluff with a fork and serve hot.
