Vegetable Pulao

Vegetable Pulao is a quick, colorful, and wholesome rice dish packed with the goodness of mixed vegetables and aromatic spices. Perfect for a light yet filling lunch, this pulao can be paired with raita or a simple salad for a satisfying meal.

Ingredients

  • 1 cup basmati rice
  • 1/2 cup mixed vegetables (carrot, peas, beans)
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 1 bay leaf
  • 2 cloves
  • 2 green cardamoms
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil or ghee
  • 2 cups water

Instructions

  1. Wash and soak rice for 20 minutes. Drain.
  2. Heat oil/ghee in a pan. Add cumin seeds, bay leaf, cloves, and cardamoms.
  3. Add sliced onion and sauté until golden.
  4. Add ginger-garlic paste and sauté.
  5. Add chopped tomatoes and cook till soft.
  6. Add mixed vegetables, salt, garam masala, and cook for 2-3 minutes.
  7. Add soaked rice and mix gently.
  8. Pour water, cover, and cook on low flame until rice is done.
  9. Fluff with a fork and serve hot.
