Lemon Rice

Lemon Rice is a bright and zesty South Indian dish made with leftover rice and a tempering of mustard seeds, curry leaves, peanuts, and turmeric. Quick to prepare, it’s an ideal lunch recipe that is light yet satisfying.

Ingredients

  • 2 cups cooked rice
  • 1/4 cup peanuts
  • 1 tbsp lemon juice
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric
  • 1-2 green chilies (slit)
  • Few curry leaves
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add peanuts, green chilies, and curry leaves. Sauté for a minute.
  3. Add turmeric and mix well.
  4. Add cooked rice and salt. Mix gently.
  5. Turn off heat, add lemon juice, and mix.
  6. Serve warm with curd or pickle.
