Vegetable Fried Rice is a perfect way to reuse leftover rice. It’s a flavorful Indo-Chinese dish filled with sautéed veggies and a soy-based sauce.
Ingredients
- 2 cups cooked rice
- 1 cup mixed veggies (carrot, beans, capsicum)
- 1 onion
- 2 garlic cloves
- 1 tbsp soy sauce
- 1 tsp vinegar (optional)
- Salt & pepper
- 2 tbsp oil
Instructions
- Heat oil in a wok, sauté garlic and onions.
- Add chopped vegetables, cook on high flame.
- Add soy sauce, vinegar, salt, and pepper.
- Mix in rice and stir-fry on high heat.
- Garnish with spring onions and serve.
Tips
- Use cold rice to avoid it turning mushy.
- Add chili sauce for extra spice.
